Pizza with Grapes, Rosemary, and Honey

Ingredients

  • Honey - 3 tablespoons
  • Water - 10 fl oz
  • Dry yeast - 0.2 oz
  • Wheat Flour - 17.6 oz
  • Salt - to taste
  • Rosemary - 1 bunch
  • Olive Oil - 3 tablespoons
  • Grapefruits - 3.5 oz
  • Grated Pecorino Pepato Cheese - 3.5 oz

Step by Step guide

Step 1

Preheat the oven to 392°F. Dissolve the yeast with a teaspoon of honey in half of the water and set aside.

Step 2

Mix the flour with a pinch of salt and mound it on a clean surface. Make a well in the center, and when the yeast with honey is foamy, pour it into the well, gradually mixing with the flour until all the liquid is absorbed. Pour in the remaining water and mix with the flour to form a soft dough. Place the dough in a clean bowl, cover with plastic wrap, and let it sit in a warm place for 15 minutes.

Step 3

Meanwhile, crush the rosemary in a mortar, add a little olive oil, and mash again. Cut the grapes in half and set aside.

Step 4

When the dough has doubled in size, place it on a work surface, knead it again, and roll it out thinly.

Step 5

Spread the rosemary over the dough, add the grapes. Drizzle the pizza with liquid honey and sprinkle with grated cheese.

Step 6

Bake in the preheated oven for 10 minutes.
