Ingredients

  • Pears - 1 piece
  • Brie cheese - 2.1 oz
  • Dorbly Cheese - 1.4 oz
  • Fig - 1 piece
  • Walnuts - 1.4 oz
  • Whole Wheat Flour - 3.5 oz
  • Wheat Flour - 4.2 oz
  • Water - 4 fl oz
  • Salt - a pinch
  • Dry yeast - 1 teaspoon
  • Olive Oil - 1 tablespoon

Step by Step guide

Step 1

Prepare the dough: add yeast to warm water, stir, and let it sit for 10 minutes. Mix the two types of flour with salt thoroughly!

Step 2

Once the water with yeast has settled, make a well in the flour and gradually pour in the liquid while kneading the dough. As soon as the dough forms a ball, add the olive oil.

Step 3

Now for the most important part: the dough will be slightly sticky, but don't worry: you need to knead it for 10 minutes (set a timer, seriously). Place the dough in a warm place, cover it with a towel, and forget about it for 30 minutes.

Step 4

Filling: chop all the ingredients as you like. Lightly grind the nuts or chop them with a knife. Preheat the oven to its maximum temperature.

Step 5

Assembly: after half an hour, the dough should have doubled in size. Roll out the dough with a rolling pin at first, then transfer it to parchment paper and stretch it by hand to your desired size and thickness (better thin, as the dough is coarse - whole wheat).

Step 6

Place the filling on the dough: first the cheeses, then the fruits, and finally the nuts on top. Adjust the amount of filling to your taste. The balance of cheese and pear is important (50/50).

Step 7

Carefully transfer the pizza on the parchment to the rack, having previously pulled it out of the oven, of course.

Step 8

Bake in the oven for 7-10 minutes. Did the edges of the dough brown slightly - has the cheese melted? Take it out!
