Pizza with Salsa Verde Sauce, Sun-Dried Tomatoes, and Ricotta

Ingredients

  • Pizza Flour - 8.8 oz
  • Sun-Dried Tomatoes - 9.9 oz
  • Ricotta cheese - 3 tablespoons
  • Chili Flakes - a pinch
  • Olive Oil - 8 fl oz
  • Fresh Mint - 1 bunch
  • Fresh basil leaves - 1 bunch
  • Ground Black Pepper - to taste
  • Garlic - 2 cloves
  • Capers - 3 tablespoons
  • Cornichons - 4 pieces
  • Ground ancho chili pepper - 1 piece
  • Parsley - 1 bunch
  • Pistachios - 1.4 oz
  • Red Wine Vinegar - 0 fl oz
  • Dijon Mustard - 1 tablespoon
  • Salt - to taste

Step by Step guide

Step 1

Roll out the dough and place it on a baking sheet greased with olive oil.

Step 2

Preheat the oven to 392°F.

Step 3

Prepare the salsa verde sauce by mixing chopped garlic, capers, cornichons, thinly sliced green chili (seeded), a handful of mint, and a handful of basil (set aside the same amount), red wine vinegar, nuts (set aside a handful for later), mustard, and half a cup of olive oil, and blend until it reaches a thick paste. Spread 2–3 tablespoons of the sauce on the dough.

Step 4

Place the ricotta and tomatoes on top of the sauce, sprinkle with chili flakes. Bake in the oven for 15–20 minutes until the dough is cooked.

Step 5

While the pizza is baking, mix the remaining oil (or part of it) with the sauce until it reaches a thinner, but not watery, consistency.

Step 6

When the pizza is ready, sprinkle with fresh mint, basil, pine nuts, salt, and ground black pepper. Drizzle with sauce and serve immediately.
