Ingredients

  • Pizza Flour - 17.6 oz
  • Passata Tomato Sauce - 4.9 oz
  • Pizza Mozzarella Cheese - 7.1 oz
  • Courgette - 1 piece
  • Olive Oil - 1½ spoons
  • Taleggio cheese - 2.1 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

In a mixing bowl, combine 1.8 kilograms of all-purpose wheat flour (such as 'Sokolnicheskaya') and 300 grams of Italian semolina flour. Add 36 grams of salt and 10 grams of sugar, and mix well. In 200 ml of warm water, dissolve 16 grams of yeast. Knead the dough by gradually adding 500 ml of warm water along with the water containing the yeast. Then, pour in 220 ml of milk (3.2% fat is ideal) and continue kneading until the dough becomes elastic. If necessary, add a little more milk. Finally, incorporate 50 ml of extra virgin olive oil thoroughly. Cover the bowl with plastic wrap and let it sit at room temperature for one hour to rise. Then, gently knead the dough with your hands and place it in the refrigerator for half an hour—after that, you can start working with it.

Step 2

Grease the bottom of a 30x20 cm baking dish with olive oil, reserving some for sautéing the zucchini. Place the pizza dough in the center and use your hands to shape it into a rough sheet, with the thickness determined by the size of the dish. Set it aside in a warm place for fifteen to twenty minutes.

Step 3

Meanwhile, slice a small zucchini into thin, long strips using a mandoline, and lightly grill them in a skillet with a small amount of olive oil. Season with salt and pepper.

Step 4

Take one kilogram of peeled tomatoes and blend them (do not whip, as this will alter the sauce's color). Tear about 20 grams of basil leaves into the sauce by hand (more or less can be added to taste), pour in two to three teaspoons of extra virgin olive oil, season with salt and pepper, and mix well.

Step 5

Toast the dough in the oven at 482°F for five minutes. Then spread tomato sauce over it and add diced mozzarella. Top with slices of zucchini, and then tear pieces of taleggio cheese over everything.

Step 6

Bake for five minutes at a temperature of 250 degrees.
