Poached skate in citrus juices with ginger

Ingredients

  • Skate Fillet - 24 oz
  • Orange juice concentrate - 24 fl oz
  • Citrus Zest Mix - 1 teaspoon
  • Lime Juice - 4 fl oz
  • Grated Ginger Root - 1½ teaspoons
  • Chives - to taste
  • Lime - 1 piece

Step by Step guide

Step 1

Combine the grated lemon zest, orange juice, lime juice, and ginger in a pot. Bring to a boil.

Step 2

Add the skate fillet, reduce the heat, and cook for 5 minutes. Carefully transfer the skate to serving plates and keep warm, covering with foil.

Step 3

Increase the heat again and cook until the sauce reduces by half, about 10-15 minutes, uncovered (the sauce should have a syrup-like consistency). Drizzle the sauce over the fish. Serve, garnished with chives and lime wedges.
