Poached Trout with Onions and Dill Seeds

Ingredients

  • Thyme - 5 sprigs
  • Bay leaf - 2 pieces
  • Spanish onions - 1 head
  • Spanish onions - 1 head
  • Carrot - 1 piece
  • Trout - 4 lbs
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Dry White Wine - 16 fl oz
  • Olive Oil - 2 tablespoons
  • Dill - 1 tablespoon
  • Chopped Sage Leaves - 1.4 oz

Step by Step guide

Step 1

Preheat the oven to 356°F. Slice the onion and carrot into half-rings. Place the thyme sprigs, bay leaves, onion, and carrot in a baking dish.

Step 2

Season the trout with salt and pepper. Place it on top of the onions.

Step 3

In a pot, bring the white wine, olive oil, and dill seeds to a boil.

Step 4

Pour this sauce over the trout and vegetables.

Step 5

Chop the parsley and sprinkle it over the fish and vegetables.

Step 6

Bake for about 40 minutes, until the vegetables are soft.
