This recipe, inspired by a well-known chef, is not the simplest, not so much in terms of execution, but rather due to the array of ingredients: you will need to gather together sriracha sauce, rice vinegar, mirin, passion fruit, sesame paste, and nori seaweed. The result is a delicate interplay of flavors featuring exotic spices, all within a single plate. It's so captivating that you'll want to recreate it again and again.
Ingredients
- Rice - 2.8 oz
- Smoked haddock fillet - 5.3 oz
- Shrimp - 1.1 oz
- Pompano fillet - 1.1 oz
- Avocado - 1.1 oz
- Cucumbers - 1.1 oz
- Mild Chili Spice - 0.1 oz
- Mandarin Puree - 1.1 oz
- Toasted Sesame - 0 fl oz
- Meyer Lemon Juice - 0 fl oz
- Salt - 0.1 oz
- Cashew - 1.1 oz
- Sriracha - 0 fl oz
- Rice Vinegar for Sushi - 1 fl oz
- Mirin - 1 fl oz
- Soy Sauce - 3 fl oz
- Vegetable Oil - 0 fl oz
- Passion Fruit - ½ pieces
- Dried Nori Seaweed - 1 piece
Step by Step guide
Step 1
Soak the cashews in water for 12 hours.
Step 2
Add sesame paste, lemon juice, salt, and 10 grams of vegetable oil to the mango puree. Whisk everything together until smooth.
Step 3
Blend together: soaked cashew nuts, sriracha, 10 grams of rice vinegar, 2 grams of chili pepper, and 10 grams of soy sauce. Process until smooth and creamy. If necessary, add clean filtered water to adjust the sauce to your desired consistency.
Step 4
In a small saucepan, combine soy sauce (90 g), rice vinegar (20 g), and mirin (30 g). Place over medium heat and bring to a simmer, but do not boil. Allow to cool.
Step 5
Marinate the cucumbers. Remove the ends of the cucumbers, cut them into 2 cm cubes, and place them in a marinating container. Chop the chili, add it to the cucumbers, and pour in the soy sauce. Let it sit for 20 minutes.
Step 6
Cook the rice until it's tender.
Step 7
Peel the shrimp, removing the shell, tail, head, and intestinal vein. Boil in boiling water for 3 minutes.
Step 8
Cut the salmon and tuna into 1 cm cubes.

Peel the avocado and cut it into 2 cm cubes.

Cut the nori seaweed into thin strips.

Cut the passion fruit in half.
Step 12
In a poke bowl, mound the rice and add soy sauce, then layer the ingredients in the following order: pickled cucumbers, tuna, avocado, salmon, and shrimp. Drizzle with cashew and mango sauces. Garnish with strips of nori and half a passion fruit.
