Ingredients
- Pollock fillet - 17.6 oz
- Onion - 1 head
- Potato - 1 piece
- Cauliflower - 7.1 oz
- Garlic - 2 cloves
- Meyer Lemon Juice - 2 tablespoons
- Olive Oil - 4 tablespoons
- Herbes de Provence - 1 teaspoon
- Ground Black Pepper - to taste
- Salt - to taste
- Herbs - to taste
Step by Step guide
Step 1
Cut the pollock fillet into portion-sized pieces.
Step 2
Pat dry with a paper towel.
Step 3
In a separate bowl, prepare the marinade. Pour in 2 tablespoons of olive oil.
Step 4
Squeeze the lemon juice.
Step 5
Add salt, pepper, and a teaspoon of herbes de Provence.
Step 6
Press the garlic through a garlic press.
Step 7
Mix all the ingredients until smooth.
Step 8
Place the pollock in a deep dish and pour the marinade over it, mixing thoroughly. Let it sit for 30 minutes.

Chop the tomato, onion, and cauliflower into random pieces.
Step 10
Spread the vegetables on a baking sheet, drizzle with the remaining olive oil, and season with salt to taste. Place in the oven for 15–20 minutes at 374°F.
Step 11
Remove the baking sheet and place the pollock fillet on top. Return to the oven for another 10–15 minutes until cooked through.

Before serving, garnish with any herbs. Enjoy your meal!
