Ingredients
- Porcini Mushrooms - 31.7 oz
- Onion - 2 heads
- Butter - 2 tablespoons
- Salt - ½ teaspoon
- Chicken Broth - 4 fl oz
- White Pepper (whole) - a pinch
- Whole egg - 3 pieces
- Chopped Sage Leaves - 2 tablespoons
- 33% Cream - 1 fl oz
Step by Step guide
Step 1
Thoroughly clean the porcini mushrooms and rinse them in cold water, allowing them to drain well. Cut large mushrooms in half or quarters; small ones can be cooked whole.
Step 2
Peel the onion and chop it into cubes. Melt the butter in a skillet, sauté the onion until golden, add the mushrooms, and simmer over low heat, stirring constantly. Gradually add the vegetable broth and simmer covered for 10 minutes, then season with salt and pepper to taste.
Step 3
Mix the egg yolks with the cream. Remove the mushrooms from the heat, add the cream mixture, and stir. Heat gently for a few more minutes, but no longer. Sprinkle with chopped parsley and serve. Dumplings make a great side dish for this meal.
