Ingredients
- Pork Skewers - 1⅕ kg
- Porcini Mushrooms - 10.6 oz
- Tomatoes - 10.6 oz
- Eggplants - 10.6 oz
- Garlic - 3 cloves
- Lemon - 1 piece
- Olive Oil - 3 fl oz
- Butter - 1.8 oz
- Vegetable Oil - 1 fl oz
- Parsley - 1.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Dice the mushrooms into 5 mm cubes. Do the same with the eggplants, sprinkle them with salt, let them sit for ten minutes, and then squeeze out the water. Remove the cores from the tomatoes and cut them into the same size cubes.
Step 2
In vegetable oil, sauté the previously salted pieces of pork, about 7–8 mm thick: two minutes on one side and two minutes on the other. At the end, add butter and finish cooking the meat in the bubbling butter for about a minute. Set the pork chops aside in a warm place.
Step 3
In the same skillet, sauté the mushrooms until they are golden brown, then transfer them to paper towels to absorb any excess oil. Do the same with the eggplants.
Step 4
Mix the mushrooms and eggplants with fresh tomatoes and a pinch of chopped parsley, place it on the meat, and put it in the oven preheated to 356°F for seven minutes.
Step 5
Mix the olive oil, lemon juice and zest, crushed garlic, and parsley. Season with salt and pepper. Drizzle this sauce over the meat before serving.
