- Veal - 5.3 oz
- Chicken fillet - 10.6 oz
- Butter - 7.1 oz
- French Baguette - 5 pieces
- Milk - 2 fl oz
- Stale Bread - 1 piece
- 10% cream - 5 fl oz
- Onion - 3 pieces
- Chicken Egg - 2 pieces
- Salt - to taste

Step by Step guide
Step 1
Soak 5 pieces of sliced bread in milk. Cut 100 grams of butter into pieces and place it in the freezer.
Step 2
Chop the onion and sauté it in 100 grams of butter until golden brown.
Step 3
Cool the sautéed onions to room temperature. Squeeze the bread to remove excess milk.
Step 4
Pass the veal, chicken fillet, onion, and bread through a meat grinder with the medium blade. Add cream to the minced meat, and season with salt and pepper to taste. Slightly beat the mixture. Then add frozen pieces of butter.
Step 5
Cut the stale bread into pieces for breading the patties. Beat 2 eggs.
Step 6
Divide the minced meat into four portions. Shape each portion into patties. Dredge each patty in flour, then dip it in beaten eggs, and finally coat it evenly with breadcrumbs.
Step 7
Sear the patties in butter. Then, bring them to readiness in a preheated oven at 356°F for 15 minutes.
