Pork Chops with Apple Chutney
Ingredients
- Olive Oil - 4 tablespoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Onion - 1 head
- Pork chop with bone - 4 pieces
- Green Apples - 4 pieces
- Apple Cider Vinegar - ½ cup
- English Dry Mustard - ¼ teaspoon
- Grated Ginger Root - 1 teaspoon
- Light Raisins, Seedless - 3.4 oz
- Cayenne Pepper - a pinch
Step by Step guide
Step 1
Peel the apples and remove the cores, then cut them into small cubes.
Step 2
Preheat the oven to 392°F.
Step 3
Heat 2 tablespoons of olive oil in an ovenproof skillet over medium heat.
Step 4
Rub the chops with salt and pepper and place them in the skillet. Sear until golden brown, about 2 minutes on each side. Then transfer to the oven until cooked through, about 5 minutes, and place on a plate.
Step 5
Meanwhile, in a saucepan, heat the remaining olive oil over medium heat. Add the finely chopped onion and sauté until translucent and golden, about 6 minutes. Add the apples and sauté for another 4 minutes. Then add the vinegar, raisins, ginger, mustard, and cayenne pepper. Mix well and cover. Cook for another 3 minutes, stirring occasionally, until the apples are soft. Season with salt and pepper and serve over the meat.
