Pork Chops with Pickled Onions
Ingredients
- Juniper Berries - 1 cup
- Rice Vinegar for Sushi - 16 fl oz
- Salt - to taste
- Sugar - 7.1 oz
- Parsley - 1 bunch
- Marjoram - 1 bunch
- Pork Skewers - 4 pieces
- Olive Oil - 8 fl oz
- Champagne Vinegar - 8 fl oz
- Scallions - 12 stalks
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Lightly toast the juniper berries in a small skillet. Transfer the toasted berries to a food processor, add the rice vinegar, 120 ml of salt, sugar, parsley, marjoram, and 120 ml of water. Blend until smooth and pour the marinade into a large dish. Add the pork chops, cover with a lid, and refrigerate for 12 hours.
Step 2
Meanwhile, marinate the onions. In a bowl, mix 2 tablespoons of salt, olive oil, and vinegar. Add the onions, cover with plastic wrap, and marinate for 2 hours.
Step 3
Remove the pork chops from the marinade and let them come to room temperature. Preheat the grill or grill pan. Grill the chops for 40-45 minutes, turning and basting with the marinade every 5 minutes. Once cooked, place the chops on a work surface and let them cool slightly.
Step 4
Meanwhile, place the marinated onions on a sheet of foil. Drizzle with 2 tablespoons of the vinegar dressing, cover with foil. Place the foil packet on the grill and cook for 8-10 minutes. Transfer the cooked onions to a plate, drizzle with the remaining dressing, and season with pepper. Slice the pork chops, arrange them on a platter, and serve with the onions. Enjoy your meal!
