Ingredients
- Smoked Ham on the Bone - 13 lbs
- Orange juice concentrate - to taste
- Water - to taste
- Onion - 2 heads
- Bay leaf - 4 pieces
- Ground clove - to taste
- Brown Sugar - 4.2 oz
- Honey - 3 tablespoons
- Oranges - 3 pieces
- Orange zest - 3 tablespoons
- Dijon Mustard - 3 tablespoons
Step by Step guide
Step 1
Grate the zest from 3 oranges and squeeze the juice from 2.
Step 2
Place the meat in a pot and cover it with water. Bring to a boil, remove from heat, and drain.
Step 3
Return the meat to the pot, add orange juice until it partially covers the meat. Then add water to fully cover the meat.
Step 4
Peel the onions, cut them in half, and insert 2 cloves into each half. Add to the pot along with the bay leaves. Cover with a lid, bring to a boil, reduce heat, and simmer for 3 hours, adding more water as needed.
Step 5
Preheat the oven to 356°F.
Step 6
Remove the meat and transfer it to a baking tray. Using a sharp knife, make crosswise cuts on the meat and insert a clove into the center of each cut.
Step 7
For the glaze, mix the sugar, juice from the 2 squeezed oranges, grated zest, honey, orange marmalade, and mustard in a bowl. Pour over the meat.
Step 8
Bake for 45 minutes, basting with juices, until a golden crust forms.
Step 9
Let it rest slightly and slice. Serve immediately.
