Pork Ham with Cloves
Ingredients
- Pork Blood - 11 lbs
- Onion - 2 heads
- Carrot - 4 pieces
- Celery salt - 2 pieces
- Turnips - 1 piece
- Bay leaf - 5 pieces
- Cognac - 2 tablespoons
- Apricot Jam - 7.1 oz
- Ground clove - to taste
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Soak the ham in salted cold water (1 tablespoon of salt per 1 liter of water) and leave it for 24 hours, changing the water to fresh salted water after 12 hours.
Step 2
Cut all the vegetables into large pieces. Place the pork with the vegetables and bay leaves in a large pot, cover with fresh boiling water, and bring to a boil. Reduce the heat, season with pepper, cover with a lid, and let it simmer for 5 hours.
Step 3
Transfer the ham to a baking tray (the vegetables will no longer be needed). Cool it down, and trim the skin with a thin layer of subcutaneous fat.
Step 4
Make diagonal cuts in the remaining fat layer in a crisscross pattern. Insert one clove into each square. Mix the jam with cognac and generously brush the top of the ham. Bake for 1 hour in the oven at 180°C.
