Description
If you don't have fresh oregano, dried will work as well. You can pour some of the sauce into a separate container. It can be used later when serving the dish.
Ingredients
- Ground coriander - 4.2 oz
- Pork Blood - 2 lbs
- Freshly squeezed orange juice - 5 fl oz
- Lime Juice - 3 fl oz
- Orange zest - 1 tablespoon

- Fresh Mint - 2.8 oz
- Olive Oil - 5 fl oz
- Garlic - 6 cloves
- Chopped Sage Leaves - 1 teaspoon
- Ground Cumin - 1 tablespoon
- Salt - 1 tablespoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Juice the oranges and limes. Grate the zest from the leftover fruits. Mix the juice and zest in a deep container. You can also add the remaining pulp.
Step 2
Chop the mint, cilantro, and oregano. Add the herbs to the container. Add the cumin and squeeze in the garlic. Season with salt and pepper, then add the oil. Mix the resulting mixture well.
Step 3
Place the meat in a marinating container (bowl or bag). Pour the sauce over it and refrigerate overnight.
Step 4
Remove the meat from the marinade and place it in a cooking container. The container should be open. Preheat the oven to 428°F and roast the meat for 30 minutes.
Step 5
Reduce the temperature to 374°F and baste the meat with the juice from the container. Continue roasting for 90 to 120 minutes depending on the weight, basting the meat every 30 minutes.
Step 6
It can be served hot or cold.
