Ingredients
- Garlic - 2 heads
- Pork Neck - 4 lbs
- Carrot - 8.8 oz
- Olive Oil - 3 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Herb Bouquet - to taste
Step by Step guide
Step 1
Choose a pork neck that is small in diameter and elongated in shape. Rinse the meat and dry it with a paper towel.
Step 2
Peel the carrots and cut them into small pieces. Peel the garlic, slice two-thirds of the cloves lengthwise, and mince one-third.
Step 3
Make many small cuts in the meat, inserting pieces of garlic and carrot into each cut. Flip the meat over and repeat.
Step 4
In a bowl, mix olive oil, salt, pepper, minced garlic, and the herb mix (your choice). Rub the mixture all over the meat.
Step 5
Wrap the meat in several layers of foil and place it in the refrigerator for a few hours (or overnight).
Step 6
Bake for 3–4 hours at 356°F. After the first hour, you can cut the foil on top to create a crust.
