Ingredients
- Pork Mince - 17.6 oz
- Shallot - 1 piece
- Garlic - 3 cloves
- Grated Ginger Root - 1 piece (about 2 cm)
- Fish Oil - 2 tablespoons
- Fresh Mint - 2 tablespoons
- Cilantro - 2 tablespoons
- Chopped Sage Leaves - 2 tablespoons
- Corn Flour for Polenta - 1 tablespoon
- Brown Sugar - 2 tablespoons
- Sweet Chili Sauce - 4 tablespoons
Step by Step guide
Step 1
Peel and finely chop the shallot and garlic.
Step 2
Peel a piece of ginger about 2 cm in size and grate it.
Step 3
Finely chop the mint, cilantro, and chives.
Step 4
In a large mixing bowl, combine the ground pork with the herbs, shallot, garlic, ginger, and fish sauce.
Step 5
Mix well and form 12 balls (if the meat is more than 500 g, there should be more balls).
Step 6
Place the balls in the refrigerator for 15 minutes to allow the fat to firm up.
Step 7
Remove the balls and roll them in corn flour.
Step 8
Heat a grill pan and place a sheet of foil on top (a Jamie trick to prevent burning).
Step 9
Place the balls on the heated pan covered with foil, drizzle with sweet chili sauce, and sprinkle with sugar.
Step 10
Fry for about 8–10 minutes until the balls are cooked through and the sauce caramelizes.
Step 11
Sprinkle with chives and serve with rice and salad.
