- Bacon - 1.8 oz
- Pork tenderloin - 1 piece
- Rosemary - 1 sprig
- Ground Black Pepper - to taste
- Vegetable Oil - 0 fl oz
- Dry White Wine - 0 fl oz
- Onion - 1.4 oz
- Cream 22% - 1 fl oz
- Butter - 0.2 oz
Step by Step guide
Step 1
Cut the pork into two pieces, pound them to form a cylinder shape. Season with salt and pepper. Wrap the tenderloin in strips of bacon. To secure the bacon, pierce the loose end with rosemary.
Step 2
Sear the medallions in vegetable oil in a skillet.
Step 3
Finely chop the onion and sauté it in butter, then add the wine. Reduce the sauce to medium thickness. Add the cream and remove from heat after it boils. Use a blender to puree the mixture until smooth.
Step 4
The dish is ready! Drizzle the sauce on the plate and place the medallions on top. You can garnish with pickled mushrooms and mustard seeds.
