- Pork Skewers - 21.2 oz
- Salt - to taste
- Garlic - 0.2 oz
- Vegetable Oil - 2 tablespoons
- Onion - 1 head
- Sugar - 2 tablespoons
- Meyer Lemon Juice - 2 teaspoons
- Fish Oil - 1 tablespoon
- Passata Tomato Sauce - 4.4 oz
- Oyster Mushrooms - 1 tablespoon
- Pineapple - 2.8 oz
- Mild Chili Spice - ½ teaspoon
Step by Step guide
Step 1
Place the pork ribs in a large pot, cover with water, and boil for about 20 minutes until the meat is tender. Cool, dry, and lightly rub with salt. Let sit for 3 hours (this can be done in advance, for example, the day before). Grill on a barbecue or grill over high heat until golden brown, but do not let the ribs burn. Set aside.
Step 2
To make the sauce, heat the oil in a wok over medium heat. Sauté the chopped garlic and onion until golden brown. Add sugar, lemon juice, and fish sauce, and stir. Add oyster and tomato sauces, chopped pineapple, and chili if using. Cook until all ingredients turn into a golden-brown syrup.
Step 3
Remove the sauce from heat, add the ribs one piece at a time, ensuring each is coated with sauce. If there isn't enough sauce, add a little water.
Step 4
Return the wok to the stove and simmer for a minute or two to allow the ribs to absorb the sauce.
Step 5
Remove from heat and serve with fresh cilantro leaves and rice.
