  • Garlic - 1 clove
  • Olive Oil - 1 fl oz
  • Ocean salt - 1.1 oz
  • Dried Chamomile - 1.1 oz

Trim the fat from the ribs, leaving a thin layer. Marinate under a weight for 4 hours.

Step 2

For the marinade: mix the mineral water, wine, garlic (crushed and finely chopped), allspice, coarsely ground black pepper, onion (passed through a meat grinder), dried thyme, and add a little salt.
