Ingredients
- Toasted Cumin Seeds - 2 tablespoons
- Green peppercorns - 1 tablespoon
- Dried Rosemary - 2 tablespoons
- Cayenne Pepper - to taste
- Garlic - 12 cloves
- Salt - to taste
- Boneless pork shoulder - 9 lbs
- Freshly squeezed orange juice - 1 cup
- Freshly squeezed orange juice - 3 fl oz
- Olive Oil - 2 tablespoons
Step by Step guide
Step 1
Sauté the cumin seeds and black peppercorns over medium heat. Transfer to a food processor, add oregano, cayenne pepper, garlic, and 1 tablespoon of salt. Blend until it forms a paste. Make small incisions in the meat, rub with the garlic mixture, and place in a roasting pan.
Step 2
In a bowl, mix the orange juice, lime juice, oil, and 3 tablespoons of salt. Pour the mixture over the pork. Cover with plastic wrap and refrigerate for 18-24 hours.
Step 3
Two hours before you are ready to roast the pork, take it out of the refrigerator to bring it to room temperature. Preheat the oven to 302°F. Roast for 3 hours, basting with the sauce every 30 minutes. Allow the finished pork to cool slightly, slice, and serve. Enjoy your meal!
