Ingredients
- Cilantro - 2 tablespoons
- Pork Blood - 42.3 oz
- Lemon - 2 pieces
- Onion - 2 pieces
- Mild Chili Spice - 1 piece
- Grated Ginger Root - 0.7 oz
- Dried Apricots - 3.5 oz
- Raisins - 1.8 oz
- Malt Vinegar - 3 fl oz
- Olive Oil - 2 tablespoons
- Brown Sugar - ½ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the lemons and immerse them in boiling water. After 5 minutes, remove and rinse with cold water. Cut each lemon into 6 wedges.
Step 2
Peel and chop the onion. Peel and slice the ginger.
Step 3
Cut the meat into 6 cm cubes. Heat olive oil in a saucepan and sauté the meat and onion.
Step 4
Add sugar, ginger, and the halved chili pepper. Season with salt and pepper. Cook, stirring, for 5 minutes, then add the lemons and pour in the vinegar.
Step 5
After 5 minutes, add 200 ml of water or vegetable or chicken broth and simmer on low heat for 20 minutes. Add dried apricots and raisins. Cook uncovered for another 10 minutes to thicken the sauce.
Step 6
Finally, sprinkle the dish with cilantro and serve immediately.
Step 7
As a side dish, boiled couscous or white rice can be offered.
