Ingredients
- Green Peas - to taste
- Dry White Wine - 6 fl oz
- Chicken Broth - 5 fl oz
- Nutmeg - a pinch
- Ground clove - a pinch
- Ground Black Pepper - ½ teaspoon
- Cinnamon - ½ teaspoon
- Thyme - ¾ teaspoon
- Salt - 1 teaspoon
- Pork tenderloin - 31.7 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Pat the pork dry with paper towels.
Step 2
In a small bowl, mix salt, thyme, cinnamon, black pepper, nutmeg, and cloves. Rub this mixture onto the pork.
Step 3
Place the meat on a small baking tray. Insert a meat thermometer into the thickest part of the pork.
Step 4
Roast the meat for 60-75 minutes or until the thermometer reads 64.41°F.
Step 5
Transfer the pork to a platter and let it rest for 10 minutes.
Step 6
Pour the wine into the baking tray and bring to a boil over high heat. Then add the broth and bring to a boil again. Boil for 2 minutes.
Step 7
Skim the fat from the juices in the tray. Slice the pork thinly. Garnish and serve, optionally with peas and apple sauce. Drizzle all with the meat juices.
