Ingredients
- Pork Neck - 5 lbs
- Onion - 4 heads
- Sparkling water - 10 fl oz
- Salt - 2 spoons
- Ground Black Pepper - 1 tablespoon
- Nutmeg - to taste
- Georgian herb blend - to taste
Step by Step guide
Step 1
Cut the neck into small pieces of about 4–5 cm, so that it absorbs the marinade well.
Step 2
Slice the onion into half-moons and gently squeeze it with your hands.
Step 3
Mix the meat with the onion, salt, and 0.5 teaspoon of pepper.
Step 4
Add sparkling water and mix again.
Step 5
Add a pinch of nutmeg and a pinch of dried herbs to taste.
Step 6
Mix everything together and let it sit for 1 hour.
Step 7
Once the meat has marinated, remove the onion.
Step 8
Skewer the meat and grill it over even heat. First, wait until the meat is sealed on one side, then start turning it to ensure it cooks evenly.
Step 9
Check the meat for doneness. A simple way to check if the pork is ready is to cut into it and see what color it is. Like chicken, pork should be fully cooked: the meat should be white, and the juices should run clear.

Serve the pork kebabs with tomato sauce or adjika.
