Pork Skewers with Mint-Cucumber Sauce
Ingredients
- Red Grape Juice - 2 cups
- Dried Rosemary - 2 teaspoons
- Ground Cumin - 2 teaspoons
- Thyme - 1 teaspoon
- Ground Cinnamon - ½ teaspoon
- Garlic - 8 cloves
- Boneless pork shoulder - 2 lbs
- Ground Black Pepper - to taste
- Courgette - 1 piece
- Yogurt powder - 7 fl oz
- Fresh Mint - 0.6 oz
- Salt - to taste
- Sesame Oil - 2 tablespoons
- Shallot - 4 heads
- Chopped Sage Leaves - 2.5 oz
- Pide bread - 4 pieces
Step by Step guide
Step 1
Prepare the marinade. In a large bowl, mix the wine, oregano, cumin, 2 teaspoons of salt, thyme, cinnamon, and 6 crushed cloves of garlic. Cut the pork into cubes and place it in the bowl with the marinade. Cover the bowl with plastic wrap and let it marinate at room temperature for 2 hours or refrigerate overnight.
Step 2
Prepare the sauce. Trim the ends of the cucumber and peel it. Cut the cucumber lengthwise and use a spoon to scoop out the seeds from each half. Finely chop the cucumber and place it in a bowl. Add the yogurt, finely chopped mint and garlic, sesame oil, and season with salt. Cover the sauce with plastic wrap and refrigerate.
Step 3
Preheat the oven to 392°F. Thread pieces of pork onto skewers and place them on a baking sheet lined with foil. If using wooden skewers, ensure that the ends of each skewer are inside the pieces of meat. Season the pork with salt and pepper. Pour the marinade into a saucepan and bring it to a boil. Bake the pork, basting with the marinade on all sides.
Step 4
Transfer the cooked pork to a plate, sprinkle with chopped shallots and parsley. Serve with the sauce and pita bread. Enjoy your meal!
