Ingredients
- Pork Skewers - 24.7 oz
- Olive Oil - to taste
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Onion - 1 head
- Garlic - 2 cloves
- Yellow Cherry Tomatoes - 1 piece
- Habanero Pepper - 2 pieces
- Lime - 1 piece
Step by Step guide
Step 1
Grill the poblano peppers until they have a slightly charred skin. Transfer them to a bowl and cover with plastic wrap. Let them sit for 15 minutes, then peel off the skin and remove the seeds. Slice them into thin strips.
Step 2
Preheat the grill again. Brush the steak with olive oil, season with salt and pepper. Place it on the grill and cook for 3–5 minutes on each side for medium doneness (or to your liking).
Step 3
Meanwhile, heat 1 tablespoon of olive oil over medium heat. Add finely chopped onion and thinly sliced garlic. Sauté, stirring, until golden brown, about 3–4 minutes. Then add finely chopped tomato, peppers, juice of 0.5 lime, 0.5 cup of water, and salt.
Step 4
Reduce the heat under the sauce and simmer for 3–5 minutes until slightly thickened.
Step 5
Slice the meat into pieces and serve drizzled with the sauce and garnished with lime wedges.
