Pork stewed in cream sauce with green beans

Ingredients

  • Cilantro - 1 bunch
  • Pork Blood - 17.6 oz
  • Onion - 1 piece
  • Chinese green beans - 14.1 oz
  • Kefir - 1½ cups
  • 10% cream - 3 fl oz
  • Parsley - 1 bunch
  • Garlic - 4 cloves
  • Soy Sauce - 1 fl oz

Step by Step guide

Step 1

Cut the pork into small cubes, season with some Armenian spice mix (including coriander, savory, tarragon, black and red pepper), slice the onion into half rings, and marinate the meat with the onion for 15 minutes. (Note: it’s better not to salt the meat!!!)

Step 2

In a hot skillet, sauté one clove of garlic (crushed first) in a small amount of sunflower oil for aroma (be sure to remove the garlic after frying, otherwise it will become bitter).

Step 3

Place the marinated meat and onion into the still hot skillet and sauté for about 5 minutes to help the meat keep its shape. Pour in a little more sunflower oil, reduce the heat to minimum, cover with a lid, and stew for about 30-40 minutes.

Step 4

In a blender, whip the 3.2% kefir (as a base) with cilantro, parsley, garlic, cream, and soy sauce. This sauce will be the base for the subsequent stewing, so its flavor will transfer to the meat. The sauce should be creamy, salty, with a specific flavor of soy sauce. I did it this way - in the blender, I whipped the kefir (about 1.5 cups) with parsley, cilantro, and garlic, tasted the base. If something was missing, I added it. Then I poured in a little cream - and whipped again to achieve a creamy taste. Then I added the soy sauce. For 1.5 cups, I used 3 cloves of garlic, 100 grams of cream, and 25 grams of soy sauce.

Step 5

Pour all the sauce over the meat and stew for another 15 minutes until the meat becomes tender.

Step 6

While the meat is stewing, place the green beans in a skillet, lightly salt, and stew for about 15 minutes.

Step 7

On a plate, first place the green beans, then the meat, and drizzle with sauce. Enjoy your meal.
