Ingredients
- Pork tenderloin - 2 lbs
- White bread - 4 slices
- Butter - 2 tablespoons
- Pears - 2 pieces
- Lemon - 1 piece
- Dry White Wine - ½ cup
- Salt - to taste
- Vegetable Oil - 1 fl oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the pears, cut them into quarters, and remove the core. Dice the pears and drizzle with the juice of half a lemon. Remove the crust from the bread and crumble it. Toast on a baking sheet in a preheated oven at 356°F for about 10 minutes.
Step 2
In a skillet, sauté the pears in butter. Transfer to a separate bowl and mix with the toasted bread crumbs.
Step 3
Using a sharp knife, slice the pork loin into pieces. Spread the pear and bread crumb mixture evenly on each piece, roll them up, and secure with wooden skewers or toothpicks. Season with salt and pepper to taste.
Step 4
In a large skillet, pour in about 1.5 cm of vegetable oil and heat it up. Sear the pork on each side for 2 minutes. Transfer to a baking dish and place in a preheated oven at 392°F for 50 minutes.
Step 5
After 50 minutes, reduce the temperature to 356°F, pour the wine into the dish, and cook for another 20 minutes. Serve the rolls hot.
