Pork Tenderloin Medallions
Ingredients
- Pork tenderloin - 7.1 oz
- Potato - 1 piece
- Onion - ½ piece
- Mustard Greens - 2 tablespoons
- Suluguni Cheese - 2.6 oz
- Olive Oil - 1 tablespoon
- Toasted Sesame - a pinch
- Mild Chili Spice - to taste
- Ground Black Pepper - to taste
- Sumac - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the tenderloin into pieces about 2 cm thick and pound them on both sides.
Step 2
Slice the tomato into slices about 5–7 mm thick.
Step 3
Do the same with the cheese.
Step 4
Slice the onion into half-rings.
Step 5
Place the pork in the heated oil in the pan and season with salt.
Step 6
Once the bottom side is browned, flip it over and reduce the heat.
Step 7
Season with black pepper.
Step 8
After 3–4 minutes, flip it again.
Step 9
Season with salt, spread mustard (about 1 teaspoon on each piece), and sprinkle with sumac.
Step 10
Top each piece with a slice of tomato.
Step 11
Add the onion to the oil, place the cheese on the meat, and season with chili pepper.
Step 12
Cover with a lid and reduce the heat a bit more.
Step 13
After 10 minutes, transfer to a plate, and place the onion on top of the cheese, sprinkling with sesame seeds.
