Pork Tenderloin Roll with Nut and Apple Filling
Ingredients
- Butter - 1.8 oz
- Bacon - 3 pieces
- Spanish onions - ½ head
- Chopped almonds - 2.5 oz
- Green Apples - 1 piece
- Cake crumbs - 1¼ cups
- Chopped Sage Leaves - ¼ cup
- Dried Rosemary - 2 tablespoons
- Olive Oil - 1 tablespoon
- Pork tenderloin - 1½ kg
- Ocean salt - 2 teaspoons
- Applesauce - to taste
Step by Step guide
Step 1
Melt the butter in a large skillet over medium heat. Add the finely chopped bacon and finely chopped onion. Sauté, stirring, for 3–4 minutes until the onion is soft. Add the nuts and cook for another 5–7 minutes, stirring, until the nuts are golden brown. Remove from heat. Add the peeled and finely diced apple, breadcrumbs, parsley, and rosemary. Mix well.
Step 2
Preheat the oven to 392°F.
Step 3
Cut the tenderloin to create a large flat piece. Place it on a board and make small crosswise cuts without cutting all the way through.
Step 4
Spread the filling on the meat and press down lightly. Roll it tightly into a log and tie it with string.
Step 5
Brush the roll with olive oil, season with salt, and transfer it to a baking dish.
Step 6
Bake for about 20 minutes, then reduce the temperature to 320°F and bake for another 1 hour 30 minutes.
Step 7
Wrap the roll in foil and let it rest for 10 minutes.
Step 8
Slice and serve with apple sauce.
