- Semi-Smoked Sausage - 2.8 oz
- Pork tenderloin - 17.6 oz
- Tarragon - 1.1 oz
- Olive Oil - 0 fl oz
- Pistachios - 0.4 oz
- Parmesan Cheese - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Make tarragon pesto: blend tarragon, olive oil, parmesan, and pine nuts in a blender.
Step 2
Cut the pork tenderloin lengthwise and pound it with a meat mallet through plastic wrap. Generously spread the pesto sauce on the tenderloin, then layer with thinly sliced smoked bacon. Roll it up and wrap in plastic wrap, then in foil.
Step 3
Bake in the oven at 356°F.
