Ingredients
- Ground dried cherries - 1 cup
- Pork tenderloin - 2 lbs
- Red Grape Juice - 21 fl oz
- Date honey - 4 fl oz
- Garlic - 2 cloves
- Ground clove - 4 pieces
- Vegetable Oil - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Spanish onions - 1 head
- Butter - 1 tablespoon
Step by Step guide
Step 1
Rub the meat with salt and pepper on all sides, place it in a skillet, and fry over medium heat. After 10 minutes, add the sliced onion.
Step 2
After adding the onion, continue frying the meat for another 20–25 minutes, until the internal temperature of the pork reaches 65–158°F. 5–7 minutes before the meat is done, add the finely chopped garlic to the skillet.
Step 3
Transfer the cooked meat to a plate and cover tightly with foil.
Step 4
Pour the wine into the skillet with the remaining onion and garlic, stir, and bring to a boil. Transfer the sauce to a pot, add the dried cherries and cloves, bring to a boil again, and cook for 15 minutes.
Step 5
Remove the pot from the heat, blend the sauce with an immersion blender until smooth. Add the butter and honey, and mix well.
Step 6
Slice the meat, arrange it on plates, and serve with the hot sauce.
