Pork with Eggplants and Peppers

Ingredients

  • Eggplants - 1 piece
  • Pork Skewers - 3 pieces
  • Tomatoes - 3 pieces
  • Orange Bell Peppers - 2 pieces
  • Italian chopped parsley - to taste
  • Dried Chamomile - to taste
  • Salt - to taste
  • Mayonnaise - to taste
  • Hard Cheese - to taste
  • Basil - to taste
  • Green peppercorns - to taste
  • Red Long Chili Peppers - to taste
  • Vegetable Oil - 1 teaspoon
  • Lemon - ¼ piece

Step by Step guide

Step 1

Cut three medium pieces of pork escalope into small pieces and tenderize well.

Step 2

Mix the meat with spices: Italian herbs, ground red pepper, black peppercorns, thyme, and squeeze the juice from a quarter of a lemon. Cover with a plate and let it sit.

Step 3

Slice the bell pepper and tomatoes into rings.

Step 4

Cut the medium eggplant into rings as well and sprinkle with salt.

Step 5

Grease a baking tray with oil and place the meat in the center. Layer the tomatoes on top of the meat, then the bell pepper, and you can sprinkle more spices on top.

Step 6

Grate cheese on top and spread mayonnaise over everything.

Step 7

Place the eggplants on the sides of the meat on the baking tray and sprinkle with spices.

Step 8

Put in a preheated oven at 180–392°F (350–400 degrees Fahrenheit) and bake for about 30 minutes, until the meat is cooked through.

Step 9

Garnish with fresh basil leaves when serving.
