- Pork Blood - 28.2 oz
- Orange juice concentrate - 5 fl oz
- Orange zest - 2 tablespoons
- Apricot Jam - 1 tablespoon
- Ground clove - 0.5 oz
- Dijon Mustard - 1 teaspoon
- Table Mustard - 2 teaspoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Honey - 3 tablespoons
- Sugar - 1 tablespoon
- Cognac - 2 tablespoons
Step by Step guide
Step 1
Wash the meat, dry it, and trim off most of the fat.
Step 2
Make shallow diamond-shaped cuts in the meat, insert cloves into the cuts, and season with salt. Let the meat absorb the salt.
Step 3
Prepare the marinade. Combine all the ingredients (honey, sugar, juice and zest of orange, mustard, and apricot jam) in a saucepan. Stirring, bring to a boil and simmer on low heat for 4-5 minutes. Allow to cool. Crush the grainy mustard in a mortar beforehand.
Step 4
Preheat the oven to 392°F. Brush the cooled glaze onto the meat. Place it in the oven covered with foil for 30 minutes.
Step 5
After 30 minutes, remove it, brush with glaze, and leave it uncovered for another 20 minutes.
Step 6
After the time is up, add all the remaining glaze and place it under the grill for 10 minutes.
