Ingredients

  • Prunes - 7.1 oz
  • Pork tenderloin - 1½ kg
  • Celery salt - 1 stalk
  • Carrot - 1 piece
  • Onion - 1 head
  • Rosemary - 2 stalks
  • Salt - to taste
  • Vegetable Oil - 1 fl oz
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Slice the pork tenderloin lengthwise, but not all the way through, creating a pocket. Then, carefully deepen the cut with a knife on both sides to widen the pocket.

Step 2

In this pocket, sprinkle in salt and pepper, stuff in the prunes, and tie it up with a string.

Heat oil in a skillet, season the pork with salt and pepper, and sear it on all sides until golden brown. In the same skillet, sauté the coarsely chopped vegetables until they are golden.

Place the pork on a baking sheet, add the vegetables and rosemary, and bake in a preheated oven at 356°F for 20 minutes.
