- Pork Skewers - 15.9 oz
- Chicken Egg - 2 pieces
- Olive Oil - 1 fl oz
- Vegetable Oil - 3 fl oz
- Dijon Mustard - 2 spoons
- Marinated cherries - 10.6 oz
- Arugula - 1 bunch
- Parsley - 1 bunch
- Breadcrumbs - 2 glasses
- Meyer Lemon Juice - 1 tablespoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a large bowl, combine diced watermelon, halved cherry tomatoes, arugula, and finely chopped parsley. Dress with a mixture of olive oil, one tablespoon of mustard, and lemon juice, then season with salt and pepper to taste.
Step 2
Beat two eggs with one tablespoon of mustard. In a large plate, combine breadcrumbs with pepper and salt to taste. Cut the meat into four steaks about 0.3 cm thick, dip them in the egg mixture, then coat in the breadcrumbs.
Step 3
In a large skillet, heat two tablespoons of vegetable oil over medium heat and sear the pork until golden brown, about two minutes on each side. Transfer to paper towels to remove excess oil. Serve with watermelon salad.
