Ingredients
- Bacon - 6 pieces
- Pork Blood - 3 lbs
- Apple juice with pulp - 20 fl oz
- New Potatoes - to taste
- Crabapples - 12 pieces
- Red Currant - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Wash and trim the pork of excess fat. Rub the meat with black pepper, cut it into small pieces, and wrap it in bacon slices to fully cover it. Transfer the meat to a baking dish and pour 375 ml of apple juice over it.
Step 3
Roast the meat for 15-20 minutes, constantly checking to ensure the juice does not evaporate too soon. Reduce the heat, baste the meat with the remaining juice, and cook for another 20 minutes, occasionally basting and adding more juice if necessary.
Step 4
Cut the apples in half and place them next to the meat. Drizzle with juices, baste the pork again, add more apple juice, and cook for another 40 minutes.
Step 5
Remove the meat and transfer it to a plate along with the apples. Cover with foil and let it rest for 10 minutes. Serve drizzled with the juices from the dish, alongside red cabbage and young potatoes.
