Ingredients

  • Milk - 24 fl oz
  • Leek - 1 piece
  • Onion - 1 head
  • Celery salt - ½ piece
  • Parsley - 3 stems
  • Chopped Sage Leaves - 1 tablespoon
  • Green peppercorns - 3 pieces
  • Bay leaf - 1 piece
  • Cod fillet - 24.7 oz
  • Hot smoked pink salmon - 7.1 oz
  • Salad Potatoes - 2 lbs
  • Butter - 12 tablespoons
  • Cream (40%) - 4 fl oz
  • Wheat Flour - 2.8 oz
  • English Dry Mustard - 1 tablespoon
  • White Pepper (whole) - to taste
  • Cheshire Cheese - 7.1 oz
  • Salt - to taste

Step by Step guide

Step 1

In a medium pot, combine the milk, chopped leek (white part), onion, celery root, parsley stems, black pepper, and bay leaf. Bring to a boil over medium heat. Remove from heat, cover, and let steep for 20 minutes.

Step 2

Strain the milk and pour it back into the pot. Cut the fresh cod fillet into pieces 5 cm wide and the smoked cod into pieces 3.5 cm wide. Add the cut cod to the milk, place over medium heat, cover, bring to a boil, and simmer on low heat for 7-8 minutes. Strain and reserve the milk. Place the cod in a bowl and cover.

Step 3

Meanwhile, peel the potatoes, cut them into quarters, and boil in a large pot of salted water until tender (about 25 minutes). Drain the water, return the potatoes to the pot, and let them sit for about 20 minutes to dry. Add 8 tablespoons of butter, cream, salt, and pepper to taste, and mash into a puree. Cover and set aside.

Step 4

Preheat the oven to 200°C (392°F).

Step 5

Melt the remaining butter in a small saucepan over medium heat. Add the flour and stir with a wooden spoon for about 4 minutes, without waiting for the mixture to turn golden. Gradually pour in the strained milk, stirring to avoid lumps. Return to the heat, add the mustard, 1 tablespoon of chopped parsley, salt, and pepper to taste. Cook, stirring, until thickened, about 5-7 minutes. Pour the sauce into a baking dish and mix with the fish.

Step 6

Spread the potato puree evenly over the cod, and sprinkle with grated cheddar cheese. Bake until golden and cooked through, about 20 minutes. If your oven has a broil function, turn it on for the last 2-3 minutes to brown the top layer.

Step 7

Serve on plates and garnish with the remaining parsley.
