Step by Step guide
Step 1
Preheat the oven to 356°F. Heat oil in an oven-safe pot on the stove. Sauté the garlic and onion until softened.

Chop the tomatoes and add them to the pot, cooking for another minute. Then add the potatoes and let it simmer for 10 minutes. Season, cover with a lid, and bake for about an hour. Before serving, sprinkle with parsley.
