Potato and Tuna Casserole
Ingredients
- Canned cod liver - 10.6 oz
- Potato - 2 lbs
- Onion - 1 head
- Anchovies - 0.4 oz
- Thyme - 2 stalks
- Cream - 3 fl oz
- Gruyère cheese - 1.8 oz
- Chopped Sage Leaves - 0.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the potatoes and boil them in salted water until tender. Reserve some of the water left after boiling for the mash. Mash or pass the potatoes through a food mill, then add cream and whisk until smooth. If the mash is too thick, add some of the potato broth. Season with salt and pepper to taste.
Step 2
Slice the onion into thin half-rings and sauté it in olive oil with chopped anchovies and thyme until the onion caramelizes.
Step 3
Combine the onion with the shredded tuna and finely chopped parsley. Season with pepper.
Step 4
Grease one large baking dish or several smaller ramekins with butter, layer the tuna mixture, and top with mashed potatoes. Sprinkle with grated cheese and place in the oven for 15–20 minutes.
