Cepelinai are a very delicious and hearty dish. Enjoy your meal!

Ingredients

  • Salad Potatoes - 6 lbs
  • Pork Mince - 0 oz
  • Onion - 2 heads
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Pork fat - 7.1 oz
  • Morels - 10.6 oz
  • Sour Cream - 3 tablespoons
  • Garlic - 4 cloves
  • Chicken Egg - 1 piece
  • Potato protein - 1 tablespoon

Step by Step guide

Step 1

Prepare the filling. Add minced garlic, salt, pepper, and marjoram to the pork mince.

Step 2

Grate the peeled potatoes on a fine grater (like for latkes).

Step 3

Squeeze the grated potatoes through cheesecloth. Fold the cheesecloth in two layers. Place the squeezed potatoes in a separate bowl and add one raw egg.

Step 4

Let the water that resulted from the squeezing settle.

Step 5

Drain the settled water. The starch will remain at the bottom, add it to the grated potatoes along with pure vitamin C to prevent the potatoes from darkening.

Step 6

Put a larger pot on the stove.

Step 7

Now we shape the cepelinai. Take a piece of dough and roll it into a ball. Then, use your fingers to flatten the ball into a patty.

Step 8

Place the filling in the center and seal it. Remember to moisten your hands with water.

Step 9

Add 1 tablespoon of starch to the boiling water to prevent the cepelinai from falling apart.

Step 10

Carefully place the cepelinai in the boiling salted water. Wait a couple of minutes and stir gently. After the water boils, reduce the heat to the lowest setting so that the water barely simmers. Cook for about 20–25 minutes.

Step 11

While the cepelinai are cooking, heat a pan. Add diced pork fat. Wait for the fat to render (but not completely), then add finely chopped onion and sauté.

Step 12

Add mushrooms, frozen ones are fine.

Step 13

When everything is sautéed, add sour cream.

Step 14

Stir and turn off the heat. Do not let the sour cream boil. However, you can skip the sour cream — it will still be very tasty. You can simply drizzle sour cream over it. It's up to personal preference.

Step 15

Serve the cepelinai on a large plate. Serve the sauce separately.
