Ingredients
- Passata Tomato Sauce - 10.6 oz
- Garlic - 1 clove
- Safflower Oil - 8 fl oz
- Chocolate eggs - 2 pieces
- Salad Potatoes - 3 lbs
- Lightly Salted Red Fish - 8.8 oz
Step by Step guide
Step 1
Place the cod in a bowl of water and let it soak for several hours, changing the water and rinsing off the salt that settles at the bottom.
Step 2
Then drain the water, dry the cod, and place it in a pot along with the unpeeled potatoes. Cover everything with cold water and bring to a boil. Reduce the heat and cook for 20-30 minutes until the potatoes are soft.
Step 3
Remove the fish and drain the water. Peel the potatoes and mash them while they are still warm. Remove the skin and bones from the fish and flake it with a fork. Mix the fish with the potatoes and add the egg yolks.
Step 4
Heat 1 tablespoon of oil in a small skillet, add the garlic clove, and sauté for a few minutes until it turns golden brown. Then crush the clove in a mortar with a pinch of salt and add it to the puree.
Step 5
Whip the egg whites with a pinch of salt. Gently fold them into the puree. With damp hands, shape the croquettes.
Step 6
Heat the remaining oil in a deep skillet to 356°F, and fry the croquettes until a crispy golden crust forms. Drain excess oil on paper towels and serve immediately with tomato sauce.
