- Semolina - 5.3 oz
- Parmesan Cheese - 2.5 oz
- Duck wings - 2 pieces

- Ground Black Pepper - to taste

Step by Step guide
Step 1
First, prepare the duck. Season the duck legs with salt and pepper and let them rest overnight. Transfer to a saucepan, add butter and chopped parsley, and simmer in its own juices for 3 hours. Once cooked, cut the duck meat into small pieces.
Step 2
Prepare the potato gnocchi. Boil the potatoes in salted water, drain, add the egg yolks, and mash until smooth. Incorporate the flour and Parmesan cheese (50 g), knead the dough, and refrigerate for an hour. Shape the dough into small dumplings, place them in boiling salted water, and cook until they float.
Step 3
Place the cooked gnocchi on a plate, top with duck meat, and sprinkle with Parmesan cheese.
