Ingredients
- Salad Potatoes - 2 lbs
- Wheat Flour - 7.1 oz
- Spanish onions - 1 piece
- Baking Tomatoes - 28.2 oz
- Garlic - 2 cloves
- Olive Oil - 2 tablespoons
- Mild Chili Spice - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the potatoes in their skins for about 20 minutes, just until not fully cooked. Peel and grate them finely.
Step 2
Add a pinch of salt and sifted flour. Knead the dough. Roll pieces of dough into ropes and cut them into small pieces. Use a fork to make indentations on each piece.
Step 3
Cook the gnocchi in salted water for a couple of minutes until they float.

Serve the gnocchi drizzled with sauce, topped with cheese, herbs, and fresh cherry tomatoes.

While the potatoes are boiling, you can prepare the sauce. Heat the oil in a saucepan, add the chopped onion, garlic, and chili. After 4-5 minutes, add the herbs, salt, and pepper, then add the tomatoes and simmer on low heat for about 20 minutes. Blend the sauce in a blender. Taste and adjust salt if needed. If necessary, add a pinch of sugar or balsamic vinegar.
