Ingredients
- Bacon - 5 pieces
- Salt - to taste
- Spanish onions - 1 head
- Salad Potatoes - 2 lbs
- Apple - 2 pieces
- Olive Oil - 4 fl oz
- Green onion tops - 4 pieces
- Red Wine Vinegar - 2 fl oz
- Dijon Mustard - 2 fl oz
- Dried Chamomile - 1 teaspoon
- Ground Black Pepper - 1.5 teaspoons
Step by Step guide
Step 1
Cut the potatoes into small pieces and boil them in salted water until tender (if the potatoes have young skins, you can leave them unpeeled). Drain and let them dry well.
Step 2
Meanwhile, heat a skillet over medium heat. Add the bacon pieces and fry until golden and crispy. Transfer to a paper towel, cool, then chop finely.
Step 3
In the bacon fat, sauté the finely chopped onion for 5 minutes until soft.
Step 4
Meanwhile, peel the apples and remove the cores. Cut into small pieces and place in a bowl.
Step 5
Add the sautéed onion, potatoes, and bacon to the apples. Mix, then add the chopped green onions, olive oil, vinegar, mustard, thyme, and black pepper. Mix and season with salt to taste.
