- Anchovy fillet - 0.5 oz
- Red Wine Vinegar - ¼ cup
Step by Step guide
Step 1
Place the potatoes in a pot, cover with water, bring to a boil, and cook until tender, about 30 minutes. Drain and cool. Peel and cut into small cubes.
Step 2
In a large bowl, mix the finely chopped green onions, finely chopped mint, cilantro, minced anchovy fillets, olive oil, and vinegar. Add the potatoes and gently mix. Season with salt and pepper to taste. Refrigerate for a while until well chilled.
