Ingredients
- Salad Potatoes - 3 lbs
- Shallot - 2.5 oz
- Mayonnaise - 5.3 oz
- Grated Ginger Root - ¼ cup
- Meyer Lemon Juice - 2 tablespoons
- Cilantro - 4.9 oz
Step by Step guide
Step 1
In a large pot of boiling salted water, cook unpeeled potatoes until tender, about 25 minutes. Drain and let cool, then refrigerate for 3 hours.
Step 2
In a blender, combine chopped shallots, mayonnaise, ginger, and lemon juice until smooth. Transfer to a small bowl and add 1.5 cups of cilantro. Season with salt and pepper.
Step 3
Peel the potatoes and cut them into small cubes. Transfer to a large bowl, add the dressing, and mix well. Refrigerate for 4 hours. Season with salt and pepper, and sprinkle with remaining cilantro. Serve.
