Ingredients
- Red potatoes - 3 lbs
- Salt - to taste
- Ground Black Pepper - to taste
- Canola Oil - 4 tablespoons
- Fresh Ginger - 1 teaspoon
- Kefir - ½ cup
- Mayonnaise - 1.6 oz
- Brown Sugar - 1½ teaspoons
- Chopped Fresh Thyme - 2 teaspoons
- Oregano - 2 teaspoons
- Watercress - 1 bunch
- Green Onion - 3 pieces
Step by Step guide
Step 1
Preheat the oven to 230°C (450°F). In a large pot, place the potatoes and cover them with cold water. Season with salt and bring the water to a boil. Then reduce the heat and simmer until tender, about 15-18 minutes. Once the potatoes are done, drain the water and return the potatoes to the pot to dry.
Step 2
Using the flat bottom of a measuring cup (a regular cup can also be used), mash each potato until flattened. Pour oil onto 2 baking sheets, arrange the potatoes on them, toss with the oil, season with salt, pepper, and ginger, and place in the oven. Roast the potatoes, stirring once, for 20-25 minutes, until golden brown.
Step 3
While the potatoes are roasting, whisk together the kefir, mayonnaise, brown sugar, thyme, and oregano, seasoning with salt and pepper. Add the warm roasted potatoes to the dressing, along with the watercress and green onions; season with salt and pepper.
