Potato Salad with Peas and Cilantro
Ingredients
- New Potatoes - 14.1 oz
- Green Peas - 10.6 oz
- Scallions - 6 pieces
- Olive Oil - 3 tablespoons
- Ground ancho chili pepper - ½ piece
- Ground Cumin - ½ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
- Cilantro - 0.7 oz
- Meyer Lemon Juice - 1 tablespoon
Step by Step guide
Step 1
Wash the young potatoes and boil them in salted water until tender. Drain and let cool. Cut into small cubes.
Step 2
Meanwhile, whisk together the olive oil, cumin, deseeded and finely chopped chili, and season with salt and black pepper to taste.
Step 3
Combine the potatoes with the peas, finely chopped onions, and cilantro. Add lemon juice to the dressing, whisk it, then pour over the vegetables and mix. Garnish with cilantro and serve.
